Our history

In 2002, José Ignacio and Juan were among the organizers of the first Spanish edition of the High Energy Physics School, Taller de Altas Energías (TAE). They spent two intense weeks supervising students and exchanging numerous reflections on science and life. From these experiences emerged shared convictions, such as the belief that knowledge should be universal, impartial, and comprehensive, as well as more lighthearted notions, such as making wine together. In fact, Juan had already made a somewhat unsuccessful attempt at this before.

Thus, José Ignacio and Juan embarked on a winemaking adventure that continues to this day. The production was intended for their own consumption. Their families reacted positively, supporting this endeavor. Jordi and Juan's father, also named Juan, quickly joined them, playing a fundamental role in the project. Another significant companion on this journey was the book "Practical Manual for Self-Sufficient Living: Artisanal Winemaking" by Carlos Pérez and Juan Luis Gervás. This extraordinary book, written in simple language yet with extreme precision, explained how to enter the world of winemaking. Another essential collaborator in carrying out this venture was Amparo Querol, a distinguished scientist in the world of wine, a friend, and a mentor.


The team operated in this way for several years, sometimes producing good wines, sometimes excellent, and sometimes not so good. Working with wine was stimulating, and of course, drinking it was always a source of enjoyment with family and friends. The grapes came mainly from the Jumilla and Fontanars dels Aforins areas, a place where memorable meals were also enjoyed. The first wine produced was San Cristóbal, followed by others with names related to particle physics: Ellipse, Higgs, Top, Charm, and "Elementary Particles." Finally, the name "h-bar" was adopted primarily due to the impracticality of creating different labels each time, given the large quantities of wine being produced. Its label includes Planck's constant, its value, and a glimpse of Schrödinger's cat paradox—a tribute to quantum physics.

Furthermore, on one of the family's arid plots of land, they decided to plant grapes to fuel their future winemaking aspirations. It was a small plot, barely a hectare, and even less arable. Eventually, the vineyard grew, and despite the small size of the land, the amount produced was significantly more than they needed for their own consumption. Since they didn't have a large enough family or many friends to share all the wine, they considered selling some of the grapes and processing the rest at a professional winery.

It was at this stage that our good friend Joan Cascant and his "Microvinya" project joined us, guiding the activity into this new phase. We decided to form a joint ownership entity, contributing all the equipment the team had acquired up to that point. The new situation added more complexity, administration, and oversight, but the group's enthusiasm continued to drive them. Another period of savoring wine culture and becoming aware of the challenges faced by rural communities unfolded.

However, another step forward was taken on their advanced path: a project to build a professional winery was proposed. Artur Konrad Ekert, a good friend of José Ignacio, was enthusiastic enough to join the team. And so, "Celler Cuántico de Gaianes SL" was established as a professional winery.

Quantum wine thus represents a "quantum" of inspiration, irrationality, nostalgia, social concern, and sharing our inner world. Quantum is meant to be savored with friends and family, collectively dreaming of the impossible, hoping to reach the unfathomable star.

Juan Fuster-Verdú

Founder – Experimental particle physicist

With decades dedicated to experimental physics, Juan brings his rigor and commitment to every bottle. He believes a quantum wine should be excellent not only in quality, but also in human and social values. His vision is clear: to create a wine that, like science, is timeless, precise, and full of nuances.

Quántic must be an excellent wine, both in terms of quality and social values. We are a small winery in a small town; we have no other choice.
